Climate, Geography, and Soil

Two vineyards can be planted with the same grape and produce wines that share almost nothing. A Chardonnay from Chablis is lean, high-acid, and stony; a Chardonnay from Napa’s warmer sites is broad, ripe, and full. The grape didn’t change — the place did. Climate, geography, and soil are the three levers that turn a variety into a style, and if you understand them you can predict a wine’s character before you ever read its label. That predictive power is the entire point of studying this material.

Climate is the single biggest driver of a wine’s shape because it governs ripeness. Cooler climates ripen grapes slowly and incompletely, preserving acidity and yielding lighter body, lower alcohol, and tart-fruit or herbal character. Warmer climates push sugar high and acid low, giving fuller body, riper fruit, and more alcohol. Sommeliers sort growing climates into three broad types:

  • Maritime — moderated by a large body of water, with mild temperatures and a small difference between summer and winter (Bordeaux, much of coastal California).
  • Continental — hot summers and cold winters with a large seasonal swing, often a shorter growing season (Burgundy, much of Central Europe).
  • Mediterranean — warm, dry, and sunny with mild winters, producing consistently ripe fruit (much of southern France, Spain, Italy, and coastal California).

Latitude gives you the crude climate, but geography fine-tunes it, and the exam loves these moderating factors.

Soil’s influence is more subtle and more debated than climate, but a few relationships are reliable and worth knowing precisely. What matters most is usually drainage, heat retention, and vigor rather than any literal “mineral flavor.”

  • Well-drained, poor soils (gravel, sand, stony sites) stress the vine, limit vigor, and often concentrate flavor — think the gravel banks of the Médoc, which also retain heat and aid ripening of Cabernet Sauvignon.
  • Limestone and chalk hold water in dry spells yet drain well, and are tied to high-acid, precise whites — Chablis’s Kimmeridgian marl, the Loire’s tuffeau, much of Champagne.
  • Slate and schist retain heat, helping ripen grapes in cool, steep sites like Germany’s Mosel and Portugal’s Douro.
  • Clay holds water and stays cool, adding structure and body — a reason Merlot thrives on the clay-limestone of Pomerol and Saint-Émilion.

The skill to build is reading these three together. Given “steep slate slopes on a north-flowing river at high latitude,” you should arrive at the Mosel: cool climate, heat-retaining slate, low alcohol, high-acid Riesling. Given “gravel banks near the Atlantic,” you should arrive at the Médoc and Cabernet. Practice by describing a region’s climate, geography, and soil, then predicting the style — and only then checking whether you were right. When precise appellation or climate figures matter, verify them against official references rather than memory.
